The Local Take: Healthy Holiday Cooking With Chef Ashley Keyes from CHOICES

This week on The Local Take, I speak with Chef Ashley Keyes, the executive chef at C. H. O. I. C. E. S, the Center Helping Children End Obesity Successfully, about healthy holiday side dishes. I asked her about any favorite childhood holiday food memories. She spoke about the food her grandparents served. 

Chef Ashley shared 3-holiday side dishes with us. I will be preparing the roasted green bean dish (at 12:53 in YT video) that includes mushrooms, cherry tomatoes, and peppers on a sheet tray. Drizzle with olive oil, season with salt pepper, and garlic roast until the veggies are less firm, and serve. She also shared a sweet potatoand apple dish (at 7:27 in YT video), and a veggie cornbread dressing (at 15:56 in YT video) that gets the umami of meat by using mushrooms.

I once tasted Chef Ashley's fresh made Rainbow smoothie, which convinced my tongue that it was ice cream. She shared that the combination of fruit and greek yogurt mixed with chia and flax seeds provide the ice cream/sorbet texture.
